Princess Cruises Introduces ‘The Salty Dog’ Gastropub
Princess Cruises is debuting The Salty DogGastropubonboard Crown Princess, pairing gourmet small dishes inspired by pub favouriteswith craft beers, cocktails and wines. <?xml:namespace prefix="o" ns="urn:schemas-microsoft-com:office:office"?>
The SaltyDog menu offerings, including a signature burger, were developed incollaboration with Ernesto Uchimura, former executive chef of Umami Burger andcurrent chef of Plan Check Kitchen + Bar in Los Angeles, who was recentlyawarded “Chef of the Year: The Comfort Master,” in Los Angeles Magazine.
Presentedeach night within the Wheelhouse Bar, in refreshed surroundings and with liveentertainment, guests will have the choice of three small plates from The SaltyDog Gastropub menu featuring new twists on classic pub dishes. Plates includePale Ale Pork Cheeks, Spicy Stout Short Ribs, Wild Mushroom Sauté, and LobsterMac & Cheese, among other delicious options.
The pièce derésistance is “The Ernesto” burger from Chef Uchimura – a rib eye and short ribbeef patty, grilled pork belly, caramelized kimchi, beer battered jalapeño andcharred onion aioli, topped with cave-aged gruyere cheese.
PrincessCruises Executive Vice President of Guest Experience Rai Caluori said The SaltyDog Gastropub was an enticing addition to the cruise line’s onboard culinaryofferingsand brought another unique dining option to its guests.
“ChefUchimura’s signature burger is sure to be savoured, along with pub favouritesreinvented for a more upscale dining experience,” Mr Calouri said.
Chef ErnestoUchimira said the ‘gastropub at sea’ was an innovative concept that hadinspired him to get creative in the galley.
“The SaltyDog Gastropub’s menu will not only satisfy comfort food cravings but also offerguests new pub food flavours and tastes, perfectly paired with a craft beer orfine whiskey,” said Mr Uchimura.
Adjacent toThe Salty Dog Gastropub, also in the Wheelhouse Bar, is an expansive new,international whiskey bar, featuring some of the best Scotch whiskeys, AmericanBourbons and international whiskeys from countries including Japan, Ireland andAustralia. Offerings include Johnny Walker Blue, Bakery Hill Classic(Australia), Connemara Whiskey Irish Cask (Ireland) and Hakushu 12 year(Japan). The menu offers daily specialised whiskey flights, allowing guests theopportunity to taste and compare selections from around the world.
The SaltyDog Gastropub and new international whiskey menu, both available in theWheelhouse Bar, have just launched onboard Crown Princess, and will be onboardEmerald Princess and Ruby Princess in mid-December. A food charge of US$19 perguest applies.
The whiskeymenu will also be available in the Wheelhouse Bar onboard Dawn Princess, SeaPrincess, Sun Princess, Diamond Princess and Golden Princess by the end of2015, and onboard all ships with the exception of Pacific Princess by thesummer of 2016.
